Chill the F Out Cookies

The last two weeks have brought about cold snaps, and for a few of my friends and family in the West, snow! With the onset of leaves changing colors, brisk mornings where you can see your breath, and crunchy frost covered grass, my sister Melissa’s appetite for baking emerged.
 
She sent a text to me after concluding her baking endeavors, telling at me to check out her Facebook post, and voila! there was this recipe for these AMAZING shortbread cookies. Now, anyone who knows me knows, Earl Grey tea with Bergamot is my favorite jam, the default tea anywhere I go, and a holy ritual when I’ve had a rough day. Now, with a cookie to add to my ritual, I was thrilled!
 
Bergamot

is the most delicate of the citrus plants, requiring special climate and soil in order to thrive.

For those of you unfamiliar with this wonderful oil, Bergamot is the most delicate of the citrus plants, requiring special climate and soil in order to thrive. Italians have used Bergamot for years to reduce feelings of stress and to soothe and rejuvenate skin. In Greece, the unripe fruits are used as sweetmeats, eaten by the spoonful as a dessert or with coffee. From the emotional health aspect, Bergamot is unique among citrus oils due to its ability to be both uplifting and calming, making it ideal to help with anxious and sad feelings. It is also purifying and cleansing for the skin while having a calming effect.
 
Coupling this oil with Rosemary makes this cookie one to thoroughly enjoy as Rosemary’s herbaceous and energizing scent is frequently used in aromatherapy and when taken internally, it helps to reduce nervous tension and occasional fatigue. For any of you looking for your next favorite cookie to savor with some tea, look no further.  I’ve included my preferred Gluten Free Shortbread Recipe from Gluten-Free Baking and I add 1-2 drops of Bergamot oil into the batter.
